Yaxell Professional Knife Sharpener
Regular sharpening will keep any knife in perfect condition and as sharp as it was when new. For Japanese knives, such as the Yaxell ranges, their harder steel – which gives them their unique sharpness – requires a special sharpener to maintain their perfect edge.
The Yaxell Gou Sharp Pro Knife Sharpener is a professional quality sharpener is designed specifically to cope with even knives as hard as Yaxell Zen, Ran, Gou, Super Gou and Super Gou Ypsilon. It features dual ceramic grinding wheels with WA400 grit which have a 5,000 stroke lifespan. Capable of sharpening both double and single edged blades, it can also be used wet (like sandpaper, for better abrasion) or dry. It disassembles easily for cleaning or for replacing the grinding wheels.
The slots of this sharpener are thinner and the angle of the wheels set at the ideal pitch for Japanese blades. The sharpener is ideal for Yaxell, Shun, Miyabi and other Japanese blades but is not recommended for European knives.
