Regional Italian Cooking with Ursula Ferrigno!
Sicily is an intriguing, beguiling island.
It’s prominent position in the Mediterranean has crowned it with an ancient and lasting importance and led to repeated conquests over the centuries giving it an extraordinary cultural legacy, it has one of the world’s best cuisines thanks to the complex influences and fusion of flavours left behind by the Greeks, Romans, Arabs, Normans and Spanish who have each occupied this rich and fertile volcanic land.
Ursula is thrilled to share some of her favourite all time recipes, with each filled with happiness from her time spent on this magnificent island.
You’ll get to make:
- Gnocco fritto – crisp crunchy, yeasted crackers rolled through the pasta machine, cut and then fried served with a dazzling array of meats , olives and anchovies.
- Frittata lasagna, colourful, delicious and a light mix of spinach ricotta and herbs layered with a tomato sugo and a light herbal omelette. A clever dish for getting ahead and impressing.
- Cuscus Trapanese from Trapani – a perfect example of the Arab influence and one of my most requested seafood recipes, that showcases the magnificent fish that the island is famous for.
- Calzone di prezzemolo – a folded bread laden with mozzarella herbs and onions so simple but it’s all in the balance of the ingredients. I begged for two days before I received this recipe from Cassibile.

Semifreddo ai torroncino – A Chocolate hazelnut and torrone gelato, (made in a loaf tin so impressive and easy to serve).

Ursula Ferrigno is an acclaimed food writer and chef who embodies the Italian and Mediterranean passion for good food made from the freshest natural ingredients. She specialises in Italian, vegetarian, baking, and gluten-free recipes.
Ursula Ferrigno is an acclaimed and experienced food writer and chef. She trained at the Auguste Escoffier School of the Culinary Arts and has taught at leading cookery schools in both the UK and Italy, she toured the US, running classes in all Sur la Table stores, is consultant chef to Caffè Nero and has made many appearances on BBC TV.
